WHAT IS A PANUOZZO?

The panuozzo (plural panuozzi) was born in the hills around Naples, in the Italian region famous for giving the world pizza. The idea is beautifully simple: take the same wood-fired dough used for pizza, shape it into a roll and bake it in the wood oven. Once it is golden and puffed, it is split open, filled with fresh ingredients and returned to the heat so everything melts together.

The result sits somewhere between a pizza and the best sandwich you have ever had — light and airy inside, crisp and blistered outside, and unmistakably wood-fired. It is street food the way Italians intended: fast, fresh and full of flavour.
